We Eat: Blueberry Coffee Cake

Monday……. enough said. This girl is struggling. I need like 100 cups of coffee today! How was everyone’s weekend? Mine was good….didn’t go as expected….but good! Matty and I had a date night Friday night at the gym…followed by…..yep you guessed it.. NETFLIX ( if you don’t have it yet…..WHY? WHY!). Satur DAY consisted of me working and Matty working on our master bathroom. Hallelujah!!!! I can not wait for our bathroom to be done! IT HAS BEEN GUTTED SINCE MARCH! This girl is getting a L O T impatient. Between Matty building a shop and him working on custom auto body….it got put on the back burner. All of our new bathroom stuff has been just sitting in our office all summer….waiting. Are you seeing the picture here? If you are a woman….you most certainly can see the picture….and you are asking…”Ashley how have divorce papers not been drawn up?”. It’s his curls ladies… and boyish grin. Gets me every time! See! I have already forgotten about the bathroom!  Saturday night we went out to dinner with some friends. Sunday Matty and I played Mary and Joseph at our church services. We had an “interview” with our preacher about how we (Mary and Joseph) met. It was definitely entertaining to say the least. So proud of Matty for doing that….. we were a little out of our comfort zone. So grateful God blessed me with my best friend.

The gym was rough this morning….. more so than usual. I can’t help but look back at how far I have come though. I was a pack a day smoker…didn’t cook….like ever! We didn’t eat it unless it came out of a box or a fast food lane. Exercise…. forget it. It didn’t happen over night though. It all happened slowly.  Matty and I did a Paleo challenge about 2 years ago. I had to cook to do this challenge. I fell in love with cooking and REAL food! I love how eating clean and real food makes me feel. Go 30 days eating REAL food …clean food… and see how YOU feel. Like a said before I was a pack a day smoker. I loved smoking! Never was going to quit. I know I know GROSS. It took a doctor telling me I had Raynaud’s Disease …. a bad sinus infection and LOT AND LOTS of prayer to quit. Cold turkey…and not looking back. Trust me if I can do it so can you! Matty and I joined a gym January of this year. I was nervous….I never took weights in school or played sports. So being active wasn’t really my thing. I didn’t know how to use any of the equipment and …free weights…forget it! I was on the treadmill for the first 5 months of my membership. Matty finally got me out of my comfort zone and helped me ( not saying him helping me was all rainbows and butterflies…I am so stubborn). Never did I ever go anywhere without makeup…. and despite what some women do… this girl can not have makeup on and sweat. Hello acne! I was very very self conscious about people seeing me without makeup and seeing my acne scars on my face. I am bragging on myself because never in my wildest dreams did I think I would be where I am today with my health. I eat good… I don’t smoke….and I exercise. I push myself everyday and set new goals at the gym. I am not an expert or pretend to be know it all. I am a make-upless , sweaty and happy person when I am there. Matty and I have met people there and we are like our own little gym family. If you are on the fence about joining a gym for your 2016 resolution or thinking about changing your eating habits. DOOO IT! It is hard work …but so worth it! IF I CAN -YOU CAN!

Are you hosting a Christmas brunch or need a good desert idea for a Christmas lunch or dinner? The recipe today is perfect for the upcoming holidays. It goes well with coffee ( duh) or a nice glass of wine (if that’s your thing…its mine). This recipe is in a cook book that I have mentioned in past blogs. Paleo Cooking from Elana’s Pantry is an amazing cook book written by the amazing Elana Amsterdam.

BLUEBERRY COFFEE CAKE : recipe credit-Elana Amsterdam

Ingredients:

Cake:

  • 2 cups blanched almond flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 4 large eggs
  • 1/4 cup Spectrum All-Vegetable Shortening
  • 1/4 cup coconut sugar
  • 1 Tablespoon vanilla extract
  • 1/2 cup frozen blueberries

Topping:

Instructions:

  • Preheat oven to 350. Grease an 8 inch round cake pan with shortening and dust with almond flour.
  • To make the cake combine the almond flour, baking soda and sea salt in a large bowl. In a medium bowl whisk together the eggs, shortening, coconut sugar and vanilla extract. Stir the wet ingredients in the almond flour mixture until thoroughly combined, then stir in the blueberries. Pour the batter into the prepared cake pan.
  • To make the topping, cream together the shortening and coconut sugar in a medium bowl. Stir in the almond flour and cinnamon, then sprinkle the topping over the cake batter.
  • Bake for 30-40 minutes, until a toothpick inserted into the center ok the cake comes out with just a few moist crumbs attached. Let the cake cool in the pan for 1 hour, then serve.

Soooo my cake pan was not 8 inches….my pie plate worked just as well!!! This cake is easy and delicious! This recipe is two thumbs up in the Wilson household! Don’t like blueberries?
