We Eat: Tessamae’s

…tooo say this momma is excited to see Friday is an understatement! Hello friends! I am back with a new blog post and I am kind of excited about it. We are talking food soooo duh. I am so sleep deprived I need toothpicks to keep my eye lids up.  There is N O T enough coffee ya’ll  and that is sad! I wouldn’t have it any other way. Being a foster parent is a rollercoaster of a ride and we are loving every minute of it! Between parenting, wifing (not a word), friending,  working, cooking, cleaning, gyming (not a word either) I am pooped and I am not seeing any sleep in sight. So learning to function on very little sleep is a crazy  new song and dance ….if you see me half a sleep somewhere give me a nudge! OK?



This company is the bee’s knees!! I am not even really sure how I found out about this company. I am sure it was through one of the paleo blogs I read or the gram. Who cares! The important thing here is that I did! Here is a little back story about good ol’ Tessemae’s….

Its Monday…..and it has been awhile since I have posted. Lots has happened since our last chat. Today is going to be short and sweet.

I am no longer going to be talking about foster care on my blog. I have had so many people in the last week ask how come Matty and I don’t have Facebook anymore. We didn’t block anyone we just deactivated our Facebook.

If you are a NEW foster parent….here is a few tips!

  1. Just because you don’t talk about your placements case and don’t show his or her face…doesn’t put you in the clear of policy.
  2. Just because the BIO parents say its ok…its really not. You need a signed paper from them stating that it is ok.

It sucks for the foster families because most of the time these placements are all the family has to children. Its their whole life and the families cant share it. Yes the identity of the child should be protected for more reason than one!

I am writing this post for the confusion to be over as to why we (Matty and I ) no longer have Facebook and why I am no longer blogging about foster care.  Its not worth it to us and we for sure don’t want to HURT anyone or make anyone’s job HARDER than it already is!

I know Facebook was how a lot of you knew when I posted to my blog. I now have a follow button on the right side of my website. Click the follow button ( it will work on any device now) and you will receive an e-mail every time I post! Also I still have Instagram…….so if you would like to follow me there as well that would be awesome @awils3n….I will be noting on there every time I post! i shop: Potato Feet

Its FriYAY !!!! Let me tell you what….I am ever so happy to see the weekend! This week has been one for the books….crazy busy with sickness and appointments and people coming to the house to work on our master bathroom ( yes that is still going on….sore subject) and more sickness.

I am dedicated to a bunch of momma made shops that I have found on the gram….but places like Old Navy -Carters-TJ Maxx and Target have been a huge success as well. You guys have easy access to those places….so I want to introduce to you the adorable little shops that I have discovered on the internet. Although shopping at little “ma and pop” shops can get a little expensive….I get that satisfaction of helping a fellow momma/woman out! Plus the cuteness and uniqueness doesn’t hurt either! 🙂 Normally I will buy just a few staple pieces from these shops and pair them with clothes I have bought from franchise stores. Because D U H who doesn’t like seeing a full shopping cart at Old Navy or Carters and loving that low price at the end?!

So today I am going to talk about a little shop called Potato Feet. Here is the About Us for Potato Feet.

“Our eldest son was born in February of 2010. He weighed in at 9lbs, 1oz and showed no signs of sliming down anytime soon. When he was still very young, the only shoes that fit him had hard soles and were made for older children. Not wanting to jam our boy’s foot into a rubber box, we decided to make our own.

I mean seriously ! All the feels for these black moccs!!!! Little loves them! They are soft and light. So with learning to walk….they are perfect!!!! If you don’t have a little…the site would be perfect when shopping for a birthday or baby shower gift!

We Eat : Orange Glazed Chicken


Brrrrrrrrrrrrrrrrrrrr…..best describes this day! It is so cold outside my bones hurt! Remind me again why I live in Indiana?! There isn’t enough coffee in the world that could warm these bones today. I guess it could be worse….right? Any who……I am a book lover…..all kinds of different books strike my fancy. Fiction…Non-Fiction…..whatever! A couple years ago I was in a desperate search for a good book series. My sister came to the rescue with The Mortal Instruments written by Cassandra Clare…..which led to The Infernal Devices….which led to The Bane Chronicles. I fell in love with these characters and Cassandra’s (that’s right…first name…. I feel like we are bffs )writing. So how pumped was I when the movie of the first book of The Mortal Instruments came out?! How upset was I after I watched it?? MAJOR LET DOWN!!! Don’t watch it if you have read the books….or don’t watch it if you want to read the books….how about just don’t watch it.  Then came SHADOWHUNTERS……..YESSSSSS FINALLY! It’s a TV series based off of the books The Mortal Instruments.  This TV series is the perfect redemption! I am not sure what network it airs on, but I am watching it on HULU. Watch it…..if you are a paranormal romance/urban fantasy/science fiction (its clean I promise)  nerd like me…you will forever be Team Clary and Jace. So while its cold outside and you don’t have much to do anyway…..read the books or start the TV series….or both! 🙂 You are welcome!!!!!

Food! Lets get tooo it! This recipe today is from …you guessed it….Juli Bauers. Why turn away from someone that is amazing?! It is right off of her blog Paleomg. This recipe will not disappoint…….duh. So the recipe is for kabobs……buutt I made it just a tad different.

Orange Glazed Chicken Kabobs :recipe credit: Juli Bauers

Ingredients: For the Orange Glaze

  • 2 cups of orange juice
  • 1/2 cup coconut aminos
  • 1 heaping tablespoon of honey
  • 1/4 teaspoon fish sauce
  • zest of 1/2 and orange (about 1/2 tablespoon)

Ingredients: For the Kabobs ( or the plate )

  • 1 1/2 pound boneless, skinless chicken thighs, cut into 1 inch cubes. ( I used chicken breasts )
  • 1 red bell pepper, cut into 1 inch squares ( I sliced mine )
  • 1 yellow bell pepper, cut into 1 inch squares ( I sliced mine)
  • 1 teaspoon fine sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • sliced green onions, for garnish
  • 1/4 cup sliced almonds
  • 2 tablespoons sesame seeds


  1. Place a large sauté pan over medium heat and add all ingredients for orange glaze. Whisk to combine. Let reduce for about 20-25 minutes. It will reduce by ⅓ and should coat the back of a spoon, that’s how you know the sauce is ready. If it’s still runny like water, let it cook longer. When the sauce is done cooking, remove from heat and set aside.
  2. While the sauce is cooking, this is a great time to toast the almonds and sesame seeds. Place both in a small sauté pan over medium heat and toss for about 10 minutes, until almonds are brown.
  3. Using metal skewers, make the kabobs: place a slice of red bell pepper, then a slice or yellow bell pepper, then 4-5 cubes of chicken and repeat with peppers and chicken until the skewers are filled. I was able to make 5 kabobs. Then sprinkle each kabob with salt, garlic powder and onion powder on all sides.
  4. Turn grill to a medium high heat and grease with a bit of ghee. Once grill is hot, place kabobs on grill and cook for 4-5 minutes on all 4 sides. Cook until no pink in the middle of the chicken remains OR until the chicken reaches an internal temperature of 165 degrees.
  5. As soon as you pull the kabobs off the grill, use a brush to brush glaze on all size of kabobs until completely coated. Leave extra sauce on the side for dipping
  6. I didn’t feel like messing with the kabobs (I know -lazy)……so I used a large sauté pan and sautéed my veggies and then added the cubed chicken. Sprinkled the garlic, onion and salt and cooked until the chicken was no longer pink in the middle. I served this over cauliflower rice. Drizzled the orange glaze over the dish.
  7. Garnish with toasted almonds and sesame seeds and sliced green onions.

Weekend Recap

Good morning ladies and gentlemen! There are so many things I can talk about today ……like Steve Harvey messing up the Miss Universe crowning……..this crazy weather……this crazy world…..but instead I am going to talk about my weekend. This past weekend was one for the books! My heart is so F U L L this morning! All of my family was in town! So instead of typing it all out for you ……I have pictures!!!

We Eat: Blueberry Coffee Cake

Monday……. enough said. This girl is struggling. I need like 100 cups of coffee today! How was everyone’s weekend? Mine was good….didn’t go as expected….but good! Matty and I had a date night Friday night at the gym…followed by…..yep you guessed it.. NETFLIX ( if you don’t have it yet…..WHY? WHY!). Satur DAY consisted of me working and Matty working on our master bathroom. Hallelujah!!!! I can not wait for our bathroom to be done! IT HAS BEEN GUTTED SINCE MARCH! This girl is getting a L O T impatient. Between Matty building a shop and him working on custom auto body….it got put on the back burner. All of our new bathroom stuff has been just sitting in our office all summer….waiting. Are you seeing the picture here? If you are a woman….you most certainly can see the picture….and you are asking…”Ashley how have divorce papers not been drawn up?”. It’s his curls ladies… and boyish grin. Gets me every time! See! I have already forgotten about the bathroom!  Saturday night we went out to dinner with some friends. Sunday Matty and I played Mary and Joseph at our church services. We had an “interview” with our preacher about how we (Mary and Joseph) met. It was definitely entertaining to say the least. So proud of Matty for doing that….. we were a little out of our comfort zone. So grateful God blessed me with my best friend.

The gym was rough this morning….. more so than usual. I can’t help but look back at how far I have come though. I was a pack a day smoker…didn’t cook….like ever! We didn’t eat it unless it came out of a box or a fast food lane. Exercise…. forget it. It didn’t happen over night though. It all happened slowly.  Matty and I did a Paleo challenge about 2 years ago. I had to cook to do this challenge. I fell in love with cooking and REAL food! I love how eating clean and real food makes me feel. Go 30 days eating REAL food …clean food… and see how YOU feel. Like a said before I was a pack a day smoker. I loved smoking! Never was going to quit. I know I know GROSS. It took a doctor telling me I had Raynaud’s Disease …. a bad sinus infection and LOT AND LOTS of prayer to quit. Cold turkey…and not looking back. Trust me if I can do it so can you! Matty and I joined a gym January of this year. I was nervous….I never took weights in school or played sports. So being active wasn’t really my thing. I didn’t know how to use any of the equipment and …free weights…forget it! I was on the treadmill for the first 5 months of my membership. Matty finally got me out of my comfort zone and helped me ( not saying him helping me was all rainbows and butterflies…I am so stubborn). Never did I ever go anywhere without makeup…. and despite what some women do… this girl can not have makeup on and sweat. Hello acne! I was very very self conscious about people seeing me without makeup and seeing my acne scars on my face. I am bragging on myself because never in my wildest dreams did I think I would be where I am today with my health. I eat good… I don’t smoke….and I exercise. I push myself everyday and set new goals at the gym. I am not an expert or pretend to be know it all. I am a make-upless , sweaty and happy person when I am there. Matty and I have met people there and we are like our own little gym family. If you are on the fence about joining a gym for your 2016 resolution or thinking about changing your eating habits. DOOO IT! It is hard work …but so worth it! IF I CAN -YOU CAN!


Are you hosting a Christmas brunch or need a good desert idea for a Christmas lunch or dinner? The recipe today is perfect for the upcoming holidays. It goes well with coffee ( duh) or a nice glass of wine (if that’s your thing…its mine). This recipe is in a cook book that I have mentioned in past blogs. Paleo Cooking from Elana’s Pantry is an amazing cook book written by the amazing Elana Amsterdam.

BLUEBERRY COFFEE CAKE : recipe credit-Elana Amsterdam



  • 2 cups blanched almond flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 4 large eggs
  • 1/4 cup Spectrum All-Vegetable Shortening
  • 1/4 cup coconut sugar
  • 1 Tablespoon vanilla extract
  • 1/2 cup frozen blueberries



  • Preheat oven to 350. Grease an 8 inch round cake pan with shortening and dust with almond flour.
  • To make the cake combine the almond flour, baking soda and sea salt in a large bowl. In a medium bowl whisk together the eggs, shortening, coconut sugar and vanilla extract. Stir the wet ingredients in the almond flour mixture until thoroughly combined, then stir in the blueberries. Pour the batter into the prepared cake pan.
  • To make the topping, cream together the shortening and coconut sugar in a medium bowl. Stir in the almond flour and cinnamon, then sprinkle the topping over the cake batter.
  • Bake for 30-40 minutes, until a toothpick inserted into the center ok the cake comes out with just a few moist crumbs attached. Let the cake cool in the pan for 1 hour, then serve.


Soooo my cake pan was not 8 inches….my pie plate worked just as well!!! This cake is easy and delicious! This recipe is two thumbs up in the Wilson household! Don’t like blueberries? i shop: Be Still Clothing Co.

My peeps!! Have you missed me? I tell you what… this week got away from me! The horrible sickness hit the Wilson house this week…poor Matty boy got hit hard with a bug, the garbage disposal stopped working, the microwave stopped heating, had to finish Christmas shopping, had to find a dress for my work Christmas party, had to find a dress for the New Years Eve Ball, and the list goes on! The next thing I know its Friday afternoon and I have yet to post a blog this week!!! No worries my friend ….I am here! I have a C R A Z Y packed weekend ahead and I am really excited about it! I love this time of year something fierce.

So with all of the online Christmas shopping that I have been doing …..I have a package and or packages on my front porch everyday. My UPS man probably be all like “This girl has a problem”. I should get him a little something for Christmas with a BIG FAT thank-you note. Is that appropriate ? Would he think I was crazy? I need feedback people! I tried ordering my dresses for my upcoming events online. EPIC FAIL!! Why did I do that? I know better than that! I have never had a successful online order when it comes to dresses. So I ventured off this week in hopes to find something perfect ! I found some great deals and couldn’t be happier! I will keep you posted!
